wine dinnerFollowing on their Hawaiian dinner held last month, The Tides Restaurant in Lexington Park will host a seven-course wine dinner on Friday at 6 p.m. The dinner will match fine French cuisine and wines with live jazz music from the band Project Natale.

Bring your appetite, because you will need it.

The aperitif course will pair a canape of smoked salmon mousse and caviar with Atmosphere Rose ‘Syrah Cabernet Cinsult’ of Provence, France. The appetizer consists of a herb-crusted lamb “lollipop” on a bed of carrot and Yukon mash with a blackberry port wine sauce and Beblenheim Riesling of Alsace, France. A salad of pickled quail egg with roasted beets, carrots, curly endive and goat cheese dressing follows with a Chateau De Fontenille Bordeaux Rouge ‘Merlot Cabernet Cabernet France’ of Bordeaux, France. The soup is a vichyssoise paired with Domaine Des Orgnes ‘Grenache Syrah’ of Cotes Du Rhone, France.

Lemon sorbet and a Montard Sparkling ‘Uni Blanc Folle Blance Colombard’ of Cotes Du Jura, France will be served to cleanse guests’ palettes before the main course.

The entree consists of red snapper en papillote with cous cous, fire roasted tomato, red onion, black olives, artichokes, and orange enjoyed with a Bellene Pinot Noir of Burgundy, France. A dessert of lemon and raspberry flan finishes the meal.

The dinner is $63 per guest, but, if you would like to enjoy the food alone, the cost is $48.
